Servings: 4

Ingredients

  • 2 French-trimmed racks of lamb (8 bones each)
  • 2 cups whole milk (for brine)
  • 6 fresh thyme sprigs
  • 4 garlic cloves, smashed
  • 2 teaspoons kosher salt
  • 1 cups panko breadcrumbs
  • 0.5 cups fresh flat-leaf parsley, finely chopped
  • 0.3 cups fresh mint, finely chopped
  • 3 tablespoons Dijon mustard
  • 2 tablespoons unsalted butter, softened
  • 0.5 teaspoons saffron threads
  • 0.5 cups dry white wine
  • 1.5 cups lamb or veal stock
  • 3 shallots, minced
  • 3 tablespoons cold unsalted butter, cubed (for finishing sauce)
  • 600 grams Yukon Gold potatoes, peeled and diced
  • 0.5 cups heavy cream
  • 1 teaspoons truffle oil
  • 1 teaspoons fine sea salt and white pepper
  • 2 tablespoons extra virgin olive oil

Steps

1.

Milk brine the lamb: Combine 2 cups whole milk (for brine), 6 fresh thyme sprigs, 4 garlic cloves, smashed, and 2 teaspoons kosher salt in a shallow dish. Submerge the 2 French-trimmed racks of lamb (8 bones each) in the brine, cover, and refrigerate. The milk tenderizes the lamb and draws out any gaminess — a nod to Indy’s Victory Lane milk tradition. 2. Bloom the saffron: Warm 0.5 cups dry white wine in a small saucepan over low heat. Add 0.5 teaspoons saffron threads, remove from heat, and steep. This unlocks the saffron’s golden color and complex flavor for the jus. 3. Build the saffron jus: Sauté 3 shallots, minced in a saucepan with a splash of olive oil over medium heat until translucent. Add the saffron wine and reduce by half. Pour in 1.5 cups lamb or veal stock and simmer until reduced by one-third. Whisk in 3 tablespoons cold unsalted butter, cubed (for finishing sauce) off the heat to finish. Season with 1 teaspoons fine sea salt and white pepper and keep warm. 4. Make the herb crust: Combine 1 cups panko breadcrumbs, 0.5 cups fresh flat-leaf parsley, finely chopped, 0.3 cups fresh mint, finely chopped, and 2 tablespoons unsalted butter, softened in a bowl. Mix until it resembles coarse green crumbs — the alternating green herbs and pale breadcrumbs evoke the checkered flag. Season with 1 teaspoons fine sea salt and white pepper. 5. Prepare the truffle potato purée: Boil 600 grams Yukon Gold potatoes, peeled and diced in salted water until very tender. Drain and rice or pass through a fine-mesh sieve. Warm 0.5 cups heavy cream and fold into the potatoes with 1 teaspoons truffle oil. Season generously with 1 teaspoons fine sea salt and white pepper and keep warm. 6. Sear and crust the lamb: Remove lamb from brine and pat completely dry. Season with 1 teaspoons fine sea salt and white pepper. Heat 2 tablespoons extra virgin olive oil in a heavy oven-safe skillet over high heat until shimmering. Sear racks fat-side down for 3 minutes, then all sides for 1 minute each. Let cool slightly, then brush meaty side generously with 3 tablespoons Dijon mustard and press the herb crust firmly onto the coated surface. 7. Roast to victory: Roast the herb-crusted racks in a 425°F oven until the crust is golden and the lamb registers 130°F for a perfect rosy medium-rare. 8. Rest and carve: Remove from oven and rest loosely tented with foil. This allows juices to redistribute for a supremely tender result. 9. Plate and serve: Spoon a swoosh of truffle potato purée off-center on each warmed plate. Carve racks into double chops (2 bones each) and lean them against the purée. Pool the golden saffron jus around and garnish with a fresh thyme sprig and a few microgreens. Serve immediately.

Notes

Sommelier pairing: A 2019 Château Pichon Baron (Pauillac) or a bold Napa Cabernet Sauvignon elevates the lamb beautifully.

The Indy connection: The milk brine is a direct tribute to the race’s most famous tradition — the winner drinking milk in Victory Lane since 1936. The checkered herb crust mirrors the iconic flag. For an extra touch, serve individual portions with a tiny bottle of Whole Milk on the side as a table detail.

Make-ahead: The lamb can brine overnight (up to 12 hours). The saffron jus and potato purée can be made 2 hours ahead and rewarmed gently.
